Spring Greens – What’s in Season

Lettuce

Celebrating the spring season is easy with the bounty of colours, textures, and flavours lettuce provides. Lettuce can be found in abundance at our local farmer’s markets, natural foods markets, and in the organic section of your nearest grocery store.

Cultivated for

more than 4000 years, lettuce did not come to North America until relatively recently – about 600 years ago. Since then, the range of cul

tivars has expanded to include varieties as different as red radicchio is from peppery mizuna. With such an assortment of choices, getting your daily veggies in is easy! Try for varieties with higher nutrient levels, as shown by their intense bright colours. Romaine and butter lettuce are great choices and switch as easily from salad plate to sandwich wrap as they do from braised to soup dishes. It’s a delicious way to a healthy diet!
